A refreshing and healthy quinoa salad with Okonatur Red Palm Oil. Bon appetit!

* 4oz red quinoa (steamed)

* 2oz Italian parsley (chopped)

* 1oz coriander (chopped)

* 1oz mint leaves

* (chopped)

* 1pc red onion (small dice)

* 2oz Kalamata olives

* 3 pc vine-ripened tomatoes (dice)

* 2oz cucumber (peeled, seeded and diced)

* 1/2 tsp salt/pepper

* 5oz Okonatur Red Palm Oil

* 1oz lemon juice

* 1/2 tsp garlic (chopped)

* 1/4 tsp Dijon mustard

* 2 pc fried tortilla bread

Serves 4

Cooking: Steam the red quinoa until soft. Let it cool. Mix together in a bowl - parsley, coriander, mint, red onion, cucumber, olives, tomatoes, salt, and pepper. Mix well.

Whisk together lemon juice, garlic, mustard and Okonatur red palm oil until combined, then add to the salad. Mix well and serve with fried tortilla triangles
